Barley Pockets Recipe
- 1 pound grnd beef
- 3/4 c. minced onion
- 3/4 c. minced green pepper
- 1 teaspoon chopped garlic
- 1 (16 ounce.) can tomatoes with juice
- 1 teaspoon chili pwdr
- 1 teaspoon grnd cumin
- 1 teaspoon oregano
- 1 c. barley
- 1 3/4 c. water
- 1/4 teaspoon salt, if you like
- 4 pitas, cut in half
- Brown beef in skillet, draining off fat.
- Add in onion, pepper, garlic and cook till onions are softened.
- Transfer mix to saucepan and add in tomatoes, chili pwdr, cumin, oregano, barley and water.
- Bring to boil, reduce heat, cover and simmer for about 30 min.
- Most of the liquid should cook away.
- Spoon into pita pockets while still warm.
- May top with lowfat sour cream, if you like.
