Hearty Lentil-Kielbasa Stew

  1. Cut sausage in half lengthwise.
  2. Cut into 1/4-inch thick half slices.
  3. In a 4-quart pot with a lid, saute the sausage in the olive oil until lightly browned.
  4. Add the onion, cabbage, celery and carrots.
  5. Cover.
  6. Cook over low heat 5 minutes, stirring once. Add the lentil soup and tomatoes with liquid.
  7. Stir well. Simmer, covered, 10 minutes.
  8. Stir in dried parsley and a little garlic powder.
  9. Cover and let sit off heat for 30 minutes.
  10. Add more garlic powder if desired.
  11. Reheat when ready to serve.
  12. This is a great winter dish and easy to prepare.
  13. I also add a few drops of Tabasco sauce to my bowl.
