Roasted Tomatoes

  1. Toss all ingredients together.
  2. Pour onto a roasting pan.
  3. Arrange tomatoes cut side down.
  4. Roast in preheated 375F oven for 20-30 minutes.
  5. Remove skins and place tomatoes in a bowl.
  6. Drain oil from pan into bowl, and add additional olive oil to cover.
  7. Store, tightly covered, in refrigerator up to 4 weeks.
