Mexican Pizza
- 1 can refried beans
- 1 c. sour cream
- 1/2 c. mayonnaise
- 1/4 to 1/2 pkg. taco seasoning
- sliced black olives
- chopped green onions
- chopped fresh tomato
- chopped fresh avocado
- grated Cheddar cheese
- tortilla chips
- Spread beans thinly on a large, flat dish (about 14 to 16 inches).
- These are available in vegetarian style if you like. Next, mix sour cream with mayonnaise and seasoning.
- Spread this like a frosting over the beans.
- Now comes the artistic part. Make the top of the plate into a target by creating circles of the following:
- center olives, perhaps five or six across, next onions, then tomato and finally avocado.
- I've found that it's nice to make a final outer ring of black olive slices that's only one slice deep.
- This usually uses up the whole can.
