Almond Cream

  1. In a saucepan sprinkle gelatin over water.
  2. Let stand 1 minute.
  3. Stir in cream and sugar.
  4. Cook over medium-low heat for 5 minutes, or until gelatin is dissolved.
  5. Remove from heat.
  6. Add hot mixture into eggs a little at a time.
  7. Return all to the pan, stirring constantly.
  8. Cook and stir over medium heat, until a thermometer reads 160F.
  9. DO NOT BOIL!
  10. remove from heat.
  11. Stir in almond extract.
  12. Pour into dessert dishes.
  13. Refrigerate until set.
  14. Add garnish if desired.
