Pear Chutney
- 3 pears, about 1lb
- 1 red chili pepper
- 12 cup sugar
- 3 tablespoons sugar
- 3 tablespoons balsamic vinegar
- 1 ounce raisins
- Peel and deseed the pears.
- Cut the pears into cubes.
- Deseed and finely chop the chili.
- Put 1/2 cup of sugar in a saucepan.
- Heat the sugar (on low heat) until it becomes light brown.
- Add pears, chili, 3 tablespoons sugar and balsamic vinegar.
- Mix and cook, uncovered, on low heat for about 15 minutes.
- Add raisins and cook another 2 minutes.
- Chill and keep refridgerated.
