Pear Chutney

  1. Peel and deseed the pears.
  2. Cut the pears into cubes.
  3. Deseed and finely chop the chili.
  4. Put 1/2 cup of sugar in a saucepan.
  5. Heat the sugar (on low heat) until it becomes light brown.
  6. Add pears, chili, 3 tablespoons sugar and balsamic vinegar.
  7. Mix and cook, uncovered, on low heat for about 15 minutes.
  8. Add raisins and cook another 2 minutes.
  9. Chill and keep refridgerated.
