Scalloped Sweet Potatoes
- 1 (500 ml) box Campbell's Cream of Mushroom Cooking Sauce
- 34 cup shreded part-skimmed mozzarela cheese
- 1 large onion, thinly sliced
- 1 tablespoon fresh oregano leaves, chopped
- 2 garlic cloves, minced
- 18 teaspoon pepper
- 3 cups peeled white potatoes, halved very thinly sliced
- 3 cups peeled sweet potatoes, halved cut into 1/4-inch slices
- 13 cup shredded lowfat parmesan cheese
- Mix cooking sauce, mozzarella cheese, onion, oregano, garlic and pepper in shallow 4 quart baking dish.
- Stir in potatoes and spread evenly.
- Sprinkle Parmesan cheese on top.
- Bake uncovered at 375F until potatoes are tender- about 1 hour 15 minutes.
- Let stand for 5 minutes before serving.
