Just Right Spaghetti Sauce
- 1- 1/2 Tablespoon Dried Parsley Flakes
- 2 teaspoons Dried Basil Flakes
- 1 Tablespoon Dried Oregano Flakes
- 1/2 teaspoons Crushed Red Pepper Flakes
- 1 whole Dried Bay Leaf, Broken Into Fourths
- 1 teaspoon Salt
- 1 teaspoon Ground Black Pepper
- 1 Tablespoon White Granulated Sugar
- 1- 1/2 pound Ground Beef, At Least 90% Lean
- 1 cup Sliced Celery Stalks
- 2 cups Chopped White Onion
- 1- 1/2 cup Chopped Green Bell Pepper
- 1 cup Sliced Button Mushrooms
- 2 Tablespoons Minced Garlic
- 28 ounces, weight Whole Peeled Tomatoes
- 15 ounces, weight Tomato Sauce
- 6 ounces, weight Tomato Paste
- 1/4 cups Red Wine
- Pre-measure all spices, salt and sugar, into a small bowl.
- Set aside.
- Brown beef in a large, heavy-bottomed pot over medium heat until browned and cooked through.
- Add celery, onion and green pepper, and cook until fragrant and transclucent.
- Stir in mushrooms, spices, and the garlic.
- Add all three cans of tomato products and the wine, then mix and season to taste.
- Simmer for approximately 1 hour, adding water as needed for liquid.
