Stir-Fried Bean Sprouts and Pork with Fish Sauce

  1. Rinse the bean sprouts and drain in a colander or sieve.
  2. Wash the ginger well, and julienne very finely with the skin on.
  3. Finely chop the green onions.
  4. Cut the pork into 1 cm wide pieces.
  5. Put into a bowl, season with salt and pepper, and coat well with katakuriko.
  6. Mix well with your hands.
  7. Heat up a frying pan with the sesame oil over medium heat, and stir fry the ginger.
  8. When it's fragrant add the pork, and stir fry until cooked thoroughly.
  9. When the pork is cooked and slightly browned, swirl in the fish sauce and stir fry quickly.
  10. Add the bean sprouts and stir fry quickly for 1 to 2 minutes over high heat.
  11. Sprinkle with black pepper, transfer to serving plates and add some chopped green onions to finish!
  12. Variation: Squeeze on some lemon or lime juice to enjoy a different flavor.
  13. The acidity is very refreshing!
