Colorado Honey Crust Cake
- 14 cup butter
- 12 cup sugar
- 2 egg yolks
- 23 cup cake flour (sift before measuring)
- 1 teaspoon baking powder
- 14 teaspoon salt
- 14 cup milk
- 12 teaspoon vanilla extract
- 1 cup whipped cream
- 34 cup walnuts, chopped
- 23 cup honey
- 1 tablespoon butter
- Preheat oven to 350F and line an 8" square pan with waxed paper.
- Cream butter and sugar together thoroughly; add egg yolks and beat until fluffy.
- Sift dry ingredients together and add to creamed mixture alternately with milk.
- Stir in vanilla.
- Pour into prepared pan and bake for 20 minutes or until cake tests done.
- Remove from pan and cool.
- Split cake into two layers.
- Spread bottom layer with whipped cream.
- Place other layer on top and spread with syrup.
- Pour half the syrup over the cake, sprinkle with chopped nuts and top with remaining syrup.
- To make syrup: Combine honey and butter; boil for five minutes.
- Cool.
