Grab and Go Granola Bars

  1. Preheat oven to 350 degrees.
  2. Lightly coat an 8 x 8 inch baking pan with nonstick cooking spray.
  3. Place oats, shredded wheat, walnuts, raisins, cinnamon and salt in the bowl of a food processor fitted with a steel blade; pulse until mixture resembles dries peas.
  4. Set aside.
  5. In a large bowl, whisk together eggs, honey, and vanilla until well blended.
  6. Add oat mixture and chocolate chips; stir to combine.
  7. Spread mixture evenly in prepared 8 x 8 pan.
  8. Bake at 350 degrees for about 18 - 20 minutes, or until golden brown.
  9. Cool completely in pan before cutting.
