Bread And Butter Pickles(For Weight Watchers)
- 1 gal. unpeeled cucumbers, sliced thin
- 8 small onions, sliced thin
- 2 large sweet peppers, sliced
- 1/2 c. coarse salt
- 5 c. vinegar (apple cider)
- 3 Tbsp. mustard seed
- 1 Tbsp. celery seed
- 1/2 tsp. ground cloves
- 1/2 tsp. turmeric
- artificial sweetener to equal 5 c. sugar (5 to 6 Tbsp. Sweet 'N Low)
- Cut cucumbers in paper-thin slices.
- Let onion, peppers, cucumber and salt
- stand
- covered with ice water for 3 hours in large container;
- drain.
- Make
- a syrup from sweetener, vinegar and spices.
- When
- sweetener is dissolved, add drained pickles. Bring to a
- boil, but do not boil.
- Pack in sterilized jars and process in
- boiling
- water
- for
- 5 minutes.
- Pickles taste best when chilled completely before serving.
