Grilled Shrimp-Caesar Salad
- uncooked large shrimp, peeled, deveined Safeway 1 lb For $8.99 thru 02/09
- 1-1/2 cups Kraft Calorie-Wise Creamy Caesar Dressing, divided
- 6 Tbsp. fresh lemon juice
- 1 Tbsp. black pepper
- 2-1/4 gal. romaine lettuce, torn
- 3 qt. tomatoes, cut into wedges
- 1-1/2 qt. fat-free Caesar-flavoured croutons
- 6 Tbsp. Kraft Shredded Parmesan
- Combine shrimp, 6 Tbsp.
- (90 mL) dressing (or 1 Tbsp.
- 15 mL dressing for trial recipe), lemon juice and pepper.
- Let stand 15 min.
- to marinate.
- Grill shrimp on medium heat 2 to 3 min.
- on each side or until shrimp turn pink.
- Toss lettuce with tomatoes, croutons, Parmesan and remaining dressing.
- For each serving: Place about 2 cups (500 mL) salad mixture on serving plate; top with about 1/2 cup (125 mL) shrimp.
- Serve immediately.
