Cheeseburger Soup
- 1/2 lb. ground chuck
- 3/4 c. onion
- 3/4 c. carrot, shredded
- 3/4 c. celery, sliced
- 1 tsp. basil
- 1 tsp. parsley
- 4 Tbsp. margarine
- 3 cans chicken broth
- 4 c. potatoes, diced
- 1/4 c. flour
- 8 oz. Velveeta
- 1 1/2 c. milk
- 3/4 tsp. salt
- 1/4 tsp. pepper
- Brown meat, set aside.
- Saute onion, carrot and celery in 2 tablespoons margarine for about 10 minutes.
- Add chicken broth, potatoes and sauteed vegetables.
- Cook about 15 minutes until potatoes are done.
- Put 2 tablespoons margarine in skillet with 1/4 cup flour.
- Make a roux.
- Put in vegetables and meat.
- Turn on low and stir in cheese and milk until cheese is melted.
- Serve hot with corn bread.
