Vegetarian Chili
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1/2 c. green pepper, chopped
- 1 lb. fresh mushrooms, cut bite size
- 1 1/2 c. sliced carrots
- 2 (15 oz.) cans red beans
- 1 (16 oz.) can corn
- 1 (16 oz.) can stewed tomatoes
- 1 (16 oz.) can tomato sauce
- 1 (3 oz.) can green chilies
- 1 1/2 Tbsp. chili powder
- 1 tsp. ground cumin
- 2 Tbsp. chopped cilantro
- 2 tsp. sugar
- Worcestershire sauce
- Pic-a-pepper sauce
- grated cheese
- Saute onion, garlic and green pepper until soft.
- Add mushrooms and carrots.
- Saute 3 minutes.
- Add rest of ingredients. Add jalapenos, Worcestershire and Pic-a-Pepper sauce to taste. Cover and simmer 45 minutes.
- Uncover and simmer for 10 minutes. Taste for spice (hotness).
- Serve in bowls and top with your choice of cheese.
