Pepperoni Lasagna Roll Ups
- 6 pieces Lasagna Noodles
- 1 cup Cottage Cheese
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Basil
- 48 slices Pepperoni
- 6 slices Swiss Cheese
- 2 cups Meatless Spaghetti Sauce
- 1/4 cups Shredded Parmesan Cheese
- Cook noodles according to package directions; drain.
- Combine the cottage cheese, oregano and basil.
- Lay noodle flat on the counter, line with 8 pieces of pepperoni, then top with Swiss cheese.
- Top with cottage cheese mixture.
- Carefully roll up filled noodle and place seam side down in a greased shallow baking dish.
- Top with spaghetti sauce and Parmesan cheese.
- Cover and bake at 350 degrees for 20-25 minutes or until bubbly.
- Let stand for 5 minutes before serving.
