Me-time Pancakes

  1. Cook a third of a cup of quinoa according to package instructions.
  2. This may include a lot of rinsing!
  3. In the winter months, I keep cooked quinoa on hand so I can save myself the time and hassle of the multiple rinses.
  4. DONT skip the rinses!
  5. I just threw the flour blend (see note below) and buttermilk together, then decided that was stupid and tried to pour out the buttermilk, which was more stupid, and then tried to combine things according to whether they were wet or dry ingredients, before glopping the whole thing together.
  6. That was when I added the 1/2 cup of cornmeal, because it looked too soggy.
  7. Then I cooked them as I would regular pancakes.
  8. Despite my chaotic nature, they turned out fantastically and I packaged up the last three for later feasting.
  9. Note: Flour blend is 1 part tapioca flour, 1 part rice flour, and 1 part potato starch or cornmeal.
