Oat Pecan Cookie Mix
- 1 cup all-purpose flour
- 12 cup sugar
- 12 teaspoon baking soda
- 12 teaspoon baking powder
- 12 cup packed brown sugar
- 34 cup old fashioned oats
- 12 cup chopped pecans
- 1 cup crisp rice cereal
- 12 cup butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- In a bowl, combine the flour, sugar, baking soda and baking powder.
- In a 1-quart glass container, layer the flour mixture, brown sugar, oats, pecans and rice cereal, packing well between each layer.
- Cover and store in a cool dry place up to 6 months.
- (1 batch (about 4 cups total).
- To Prepare Cookies:.
- In a mixing bowl, cream the butter.
- Beat in egg and vanilla.
- Add the cookie mix and mix well.
- Drop by rounded teaspoonfuls 2 inch apart onto greased baking sheets.
- Bake at 350 for 8-10 minutes or until golden brown.
- Cool for 2 minutes before removing from pans to wire racks.
