Vermont Apple Cobbler Recipe
- 6 med. apples
- 1/2 c. maple syrup
- 1/4 c. butter
- 1/2 c. sugar Or possibly
- 1/4 c. honey or possibly maple syrup
- 1 egg
- 1 c. flour
- 2 teaspoon baking pwdr
- 1/2 teaspoon salt
- 1/4 c. lowfat milk
- Pare and core apples; slice thin.
- Drop into 1/2 c. maple syrup; stir to coat apples.
- Spread proportionately in greased shallow 2-qt baking dish.
- Cream butter to consistency of mayonnaise; add in sugar while continuing to cream.
- Beat in egg.
- Mix and sift flour, NPS, baking pwdr, and salt.
- Add in alternately with lowfat milk to butter-sugar mix.
- Spoon over apples, spreading smoothly with rubber spatula.
- Bake in 400 degree oven 30-35 min or possibly till topping is golden and cake tester comes out clean.
- Serve hot plain or possibly with additional maple syrup or possibly with whipped cream.
