Brat-stuffed Sandwich
- 4 whole Bratwurst Sausages
- 3 Tablespoons Olive Oil, Divided
- 1 whole Medium Onion (or 1/2 Large)
- 2 whole Jalapeno Peppers
- 1 Tablespoon Butter
- 1 whole 12-inch Crusty Italian Loaf
- 1 Tablespoon Hot Mustard, Prepared
- 1/2 cups Mayonnaise
- 2 Tablespoons Honey
- 1- 1/2 cup Shredded Cheddar Cheese
- Brown the bratwurst in a heavy skillet over medium-high heat in 2 tablespoons olive oil.
- Turn the heat to medium-low and add enough water to cover the sausage.
- Cover and cook for 20 minutes.
- While the meat is cooking, slice the onion, seed and slice jalapenos, and saute in butter and remaining olive oil until slightly browned at the edges.
- Remove to a plate.
- Slice the bread lengthwise, and scoop out the insides (leaving 1/2 inch around).
- Toast under the broiler.
- Mix the mustard, mayonnaise, and honey together for the sauce.
- To assemble, spread both halves of the bread with equal amounts of the sauce.
- In the bottom half, lay the sausages, tuck in half of the cheese, followed by the onion/pepper mixture.
- Top with the remaining cheese, and put this half under the broiler for a few minutes until the cheese is melted.
- Cover with the top half of the bread, slice, and enjoy!
