Mamma's Mostaccioli
- 1 lb diced smoked sausage (beef)
- 2 cups diced zucchini
- 2 cups drained rinsed black olives
- 14 cup diced onion
- 2 cups diced drained tomatoes
- 32 ounces red pasta sauce
- 12 ounces cooked drained bow tie pasta
- 1 cup shredded parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 cup sliced mushrooms
- 14 teaspoon ground oregano
- 12 teaspoon granulated garlic
- 14 teaspoon dried basil
- Sautee the sausage and the onions until the onions are tender.
- Add the mushrooms and the zucchini and sauteed until the zucchini and the mushrooms are hot and just starting to get tender.
- Sprinkle the oregano, garlic, and basil on top of the mixture and stir.
- Remove from heat to cool about 15 minutes.
- Stir in the parmesan cheese, mozzarella cheese, black olives, noodles and sauce.
- After stirring the mixture all together pour into a casserole dish and cover with foil.
- Heat in a 350* oven for 30 minutes.
- Remove let sit 5 minutes and serve,.
