Baked Mushroom Casserole
- 1 large onion, chopped
- 2 tablespoons margarine
- 12 cup egg substitute
- 14 cup light cream
- 14 cup 1% low-fat milk
- 2 (16 ounce) packages fresh mushrooms, sliced
- 4 ounces cheese spread (i.e. Cheez Whiz)
- 14 teaspoon salt
- 14 teaspoon ground black pepper
- 1 cup Ritz cracker, crushed
- Preheat oven to 350 degrees.
- Spray a 1.5 quart casserole with cooking spray and set aside.
- Saute onions and mushrooms in butter.
- There will be a lot of liquid in the pan from the mushrooms, which is okay.
- Set aside.
- Combine all the remaining ingredients in a large mixing bowl.
- Add the cooked onions, mushrooms and liquid to the bowl and mix well.
- Pour mixture into prepared casserole dish.
- Bake at 350 degrees for 30 minutes.
- Cover and bake an additional 30 minutes.
