Chipotle Tomato Soup

  1. Cook and stir onions in hot oil in large skillet until tender.
  2. Add tomatoes, carrots, chicken broth and crushed red pepper; mix well.
  3. Bring to a boil on medium-high heat.
  4. Reduce heat to medium-low; simmer 15 min.
  5. or until vegetables are tender, stirring occasionally.
  6. Transfer vegetable mixture to a blender container in small batches; cover.
  7. Blend until smooth, adding dressing and chipotles to the last batch.
  8. Serve warm or chilled.
