Spinach and Boston Lettuce With Grapefruit and Maple-Walnut Vina

  1. FOR THE VINAIGRETTE:.
  2. In a bowl, mix the vinegar, maple syrup, and salt.
  3. Gradually whisk in the peant or vegetable oil and the walnut oil, if using.
  4. The dressing can also be made in a blender up to this point.
  5. Stir in the chopped walnuts.
  6. FOR THE GREENS:.
  7. In a salad bowl, combine the spinach, lettuce and grapefruit.
  8. TO ASSEMBLE:.
  9. Pour the vinaigrette over the salad and toss.
  10. Serve immediately.
