Pineapple Pepper Dip
- 1 cup chopped assorted bell peppers (green, red and/or yellow)
- 1 cup sour cream
- 1 (8-ounce) package cream cheese, softened
- 1 (8-ounce) can crushed pineapple, well drained
- 1/8 teaspoon salt
- 2 tablespoons coarsely chopped fresh cilantro or parsley
- 2 tablespoons chopped green onion
- 2 teaspoons finely chopped seeded jalapeno pepper
- 1 teaspoon freshly grated lime zest
- 1 teaspoon lime juice
- Fresh vegetable sticks (pepper, celery, carrot, cucumber, etc.)
- Tortilla chips
- Combine all ingredients in bowl except vegetable sticks and tortilla chips.
- Beat at medium speed, scraping bowl often, until well mixed.
- Cover; refrigerate at least 1 hour.
- Serve with fresh vegetable sticks or tortilla chips.
