Grandmother'S Aspic(Salad)
- 1 large can V-8 juice
- 4 pkg. unflavored gelatin
- 2 Tbsp. salt
- approximately 1 Tbsp. sugar or to taste
- 4 to 5 Tbsp. lemon juice
- 1 c. diced celery
- 1/2 c. diced onion
- 1 c. Spanish olives, cut up
- 1 c. pecans, chopped
- 3/4 c. water
- 3/4 c. mayonnaise
- Soften gelatin in 3/4 cup water.
- Pour V-8 juice into large pot; heat to boiling.
- While heating juice, combine celery, onion, olives and nuts in bowl.
- When juice has reached boiling point, add gelatin.
- Remove from heat.
- Stir until dissolved.
- Let cool somewhat.
- Add lemon juice and sugar.
- Add salt to taste.
- Add other ingredients, except mayonnaise.
- Pour into greased Bundt mold or other large mold.
- Let jell until very firm.
- Serves 12 to 15.
