Dijon Fresh Tomato Sauce

  1. Saute garlic in hot oil in large saute pan on medium heat 1 to 2 minutes or until tender.
  2. Add tomatoes, peppers and olives.
  3. Reduce heat to low; simmer, uncovered, 10 minutes, stirring occasionally.
  4. Add mustard; mix well.
  5. Remove from heat.
  6. Spoon 1/4 cup (2 oz.)
  7. sauce over each 4- to 6-oz.
  8. serving of grilled or broiled fish, pork or chicken.
