Three Bean Casserole
- 1 onion, chopped
- 1/2 lb. bacon, diced
- 1 lb. ground beef
- 1 c. ketchup
- 1/2 c. brown sugar
- 1 Tbsp. Worcestershire sauce
- 2 Tbsp. vinegar
- 1/4 tsp. prepared mustard
- 1/8 tsp. ginger
- 1 (16 oz.) can Campbell's pork and beans
- 1 (16 oz.) can kidney beans, drained
- 1 (16 oz.) can butter beans or lima beans, drained
- In skillet, fry onion and bacon until brown.
- At the same time, fry the ground beef in another skillet until brown.
- Drain off excess fat and add to onion and bacon mixture.
- In a small bowl, mix ketchup, sugar, Worcestershire sauce, vinegar, mustard and ginger.
- In another bowl, combine all the beans.
- Grease a large casserole and spread a thin layer of meat mixture over the bottom. Cover with a layer of beans, then sauce.
- Repeat layers.
- Bake, uncovered, in a 350u0b0 oven for 1 hour.
- Makes a large casserole .... and freezes well.
