Best Ever Bruschetta
- 1 whole Roasted Red Pepper, Jarred Or Freshly Roasted And Peeled And Seeded
- 1/4 cups Sundried Cherry Or Regular Tomatoes In Oil
- 1/4 cups Fresh Basil
- 1 Tablespoon Fresh Oregano
- 3 whole Tomatoes, Diced
- 2 Tablespoons Sweet White Onion, Finely Diced
- 2 cloves Garlic, Minced
- 1/4 cups Parmesan Cheese, Grated
- 2 Tablespoons Extra Virgin Olive Oil
- 1 teaspoon Balsamic Vinegar
- Salt And Pepper, to taste
- 1 whole Baguette, Sliced And Brushed With Olive Oil And Toasted
- Olive Oil, For Brushing On The Baguette Slices Before Toasting
- Dice roasted peppper, sundried tomatoes, basil and oregano and put it into a large bowl.
- Fold in all the other ingredients (except the bread of course) and refrigerate to let the flavours meld.
- Bring back to room temperature before serving on the toasted baguette.
- So very good!
