Salsa and ham Spanish omlette

  1. Combine tomato, onion, cilantro, spring onion and chilli in a bowl.
  2. Squeeze juice from the lime over mixture, add vinegar and oil then fold in avocado to make your salsa.
  3. Whisk eggs and milk in seperate bowl.
  4. Pour into a hot, greased frying pan.
  5. Let cook for 30 seconds.
  6. Turn on grill to high.
  7. Add salsa to eggs, dolopping over eggs but dont mix.
  8. Add ham and cover full omlette with grated cheese.
  9. Cook a further 3 minutes
  10. Sprinkle paprika over cheese and place frying pan under grill to cook top and melt cheese (approx 2 min)
