Anderson's Split Pea Soup Recipe
- 8 c. water
- 2 c. green split peas
- 1 x celery rib coarsely minced
- 1 lrg carrot minced
- 1 sm onion minced
- 1/4 tsp thyme
- 1 dsh red pepper
- 1 x bay leaf Salt to taste Freshly-grnd black pepper to taste
- Combine water, peas, celery, carrot, onion, thyme, red pepper and bay leaf in large kettle.
- Season to taste with salt and pepper.
- Boil vigorously 20 min, then reduce heat, cover, and simmer till split peas are tender.
- Press soup through fine sieve and reheat just to boiling point.
