Boneless Stuffed Chicken Breast Recipe
- 4 to 6 skinned boneless chicken breasts
- 1/2 c. seasoned bread crumbs
- 1/4 c. grated Parmesan
- 1/4 c. grated Romano
- 1/4 c. grated Monterey Jack
- 1/4 c. lowfat milk
- 2 tbsp. melted butter
- Salt and pepper
- 1 tbsp. each of 3 cheese (reserve)
- Using one breast at a time, place between two pcs of wax paper and flatten breast.
- Mix remaining ingredients in bowl to make stuffing.
- Place 1 1/2 Tbsp.
- of stuffing fold in center of each breast, roll and truss with toothpick.
- Bake at 350 degrees for 20 min.
- Remove from oven, sprinkle with grated cheese mix (garnish).
- Put back in oven.
- Bake till cheese becomes golden.
- Serves 4-6.
