Surprising Crab Omelet over Rice
- 4 Egg (2 per servings)
- 100 grams Spinach
- 1 Kimchi
- 2 slice Melting cheese (sliced)
- 300 ml Water
- 2 tsp Weipa
- 1 tsp Oyster sauce
- 1 tsp Soy sauce
- 1 tsp Sugar
- 2/3 tbsp Katakuriko
- 1 finely chopped, 1 dash Green onion or scallion
- 2 rice bowls Piping hot rice
- Cut the spinach into 1-2cm lengths and lightly boil in salted water.
- Strain into a colander and tightly wring out the excess moisture.
- (Make the ankake sauce) Put water into a small pot and turn on the heat.
- Once it comes to a boil, add the Weipa, oyster sauce, soy sauce, and sugar, and mix well.
- While it's still being heated, add in katakuriko mixed with 1 tablespoon of water (not listed).
- Once the sauce has thickened, it's finished.
- Put the rice in a dish and top with cheese.
- Put the spinach and kimchi on top of the cheese.
- Since it will be covered with the egg, don't worry about how it looks.
- Break the egg into a bowl and beat with chopsticks.
- Heat vegetable oil in a frying pan.
- When it becomes hot, pour in all of the egg and stir with large strokes.
- Stop the heat when it is still just halfway cooked.
- Slide the half-cooked egg onto the rice from Step 3 and then cover with the ankake sauce from Step 2.
- Garnish with the scallion and it's complete.
- Enjoy hot!
