Classic Sofrito

  1. On a cutting board, mince the garlic, then mash it with a large pinch of salt.
  2. Heat the olive oil in a medium saucepan.
  3. Add the onion and chiles and cook over low heat until softened, about 5 minutes.
  4. Add the garlic and cook, stirring, for 1 minute.
  5. Add the tomato and cook over moderately high heat until the juices have evaporated, about 4 minutes.
  6. Stir in the cilantro and let cool.
