Carrots Pureed W/ Cream

  1. Saute onions w/ butter until soft.
  2. Add carrots, water and cook until tender.
  3. Add more water if necessary.
  4. Remove carrots and puree until smooth.
  5. (Optional) press through a fine sieve if looking for an extremely smooth consistency.
  6. Add cream, lemon juice and season TT.
