Curried Goat Or Beef

  1. Marinate mutton or beef overnight with chives, onions, salt, pepper, parsley and celery; stir occasionally.
  2. In a large, heavy pot, heat the oil and saute the curry powder and cumin over low heat for 5 minutes.
  3. Add the meat and all the marinade and sear the meat all over in the hot oil.
  4. Add 1 quart of water and bring to a boil.
  5. Cover; lower the heat and simmer for 1 hour and 15 minutes.
  6. Stir occasionally and add more water if the meat starts to dry.
  7. Serve with hot rice.
