Yogurt Relish with Okra

  1. Pour the oil into a small frying pan and set over medium-high heat.
  2. When hot, put in the mustard seeds.
  3. As soon as they start to pop, a matter of seconds, add the okra.
  4. Stir for a minute.
  5. Now turn the heat down to medium low.
  6. Stir and fry for 810 minutes or until the okra is lightly browned.
  7. Sprinkle 1/8 teaspoon salt over the okra, mix, and take the pan off the heat.
  8. Set aside.
  9. Put the yogurt in a bowl.
  10. Whisk lightly with a fork until creamy.
  11. Add 1/4 teaspoon salt and the cayenne.
  12. Stir to mix.
  13. Just before eating, fold the entire contents of the frying pan into the yogurt.
