Hummingbird Cake(Note: Do Not Beat It As You Mix It Together.)
- 3 c. all-purpose flour, sifted
- 2 scant c. sugar
- 1 tsp. salt
- 1 tsp. soda
- 1 tsp. cinnamon
- 1 1/2 tsp. vanilla
- 1 1/4 c. oil
- 3 eggs, beaten
- 1 1/2 c. crushed pineapple
- 1 1/2 c. mashed bananas
- 1 c. pecans
- 1 pkg. cream cheese
- 1/2 stick margarine
- 1 lb. confectioners sugar
- 1 tsp. vanilla
- small amount of milk
- Have all ingredients at room temperature.
- Cream margarine and cheese thoroughly, then add confectioners sugar, small amount at a time, blending well between additions.
- Thin to desired consistency with milk.
- Spread between layers, on top and sides of cake.
