Chocolate Irish Cream Cake
- 12 oz. pkg. semi-sweet chocolate chips
- 1/2 c. butter
- 6 eggs, separated (at room temperature)
- 1/2 c. sugar
- 1/2 c. finely chopped pecans
- 1/4 c. Irish cream liqueur
- 1 tsp. vanilla
- dash of cream of tartar
- 1/2 c. sugar
- 2 c. whipping cream
- 1/4 c. powdered sugar
- 1/4 c. Irish cream liqueur
- 2 oz. chocolate curls
- fudge frosting
- Heat oven to 350u0b0.
- Grease and flour 10-inch spring-form pan. In top of double boiler, over hot but not boiling water, melt chocolate chips and butter.
- In large mixing bowl, beat egg yolks until very thick, about 5 minutes.
- Beat in 1/2 cup sugar, 1 tablespoon at a time.
- Stir in melted chocolate, pecans, 1/4 cup liqueur and vanilla.
