Raspberry and Mascarpone on Brioche

  1. Preheat a Panini grill.
  2. Spread two slices of the bread with the mascarpone cheese.
  3. Place raspberries on top and sprinkle with the sugar.
  4. Top both sandwiches with the second slice.
  5. Brush both sides of the Panini with a little oil and grill in the preheated Panini grill for 2 minutes or according to the manufacturers instructions.
  6. The bread should be golden brown and the filling warmed through.
