Chopped Salad/ Greek Style
- 6 cup baby spring greens
- 1/2 cup cherry tomatoes
- 1/4 cup kalamatta olives, pitted
- 1/4 cup pepperoncini peppers, sliced
- 1/2 red bell pepper, chopped
- 2 clove garlic
- 1/4 cup olive oil, extra virgin
- 1/2 cup white vinegar
- 1/2 tsp greek seasoning
- 1/4 tsp fresh lemon juice
- Chop up the baby greens.
- Hand chop or in processor, chop olives and garlic.
- Chop half of red bell pepper into a medium chop.
- Slice the cherry tomatoes in half.
- In a large bowl add in all your ingredients and also the sliced pepperoncini.
- In a blender or shaker jar, add your dressing ingredients.
- Mix well and toss some on your salad.
- You will not use all that you made.
- Use enough to your taste preference and the rest may be stored in the refrigerator in an airtight container for a week.
- Greek seasoning if you can't find it is comprised of salt, oregano, garlic powder, lemon zest, dried, ground black pepper and a touch of marjoram.
- You can make your own by adding these spices together.
- Use a little of each, taste and adjust.
