Vickys Pork and Apple Meatloaf
- 750 grams pork mince (ground pork)
- 100 grams diced bacon
- 1 grated apple
- 1 small onion, finely diced
- 2 slice gluten-free bread made into crumbs
- 5 tbsp apple juice
- 2 tbsp light coconut milk or other milk of choice
- 1 tbsp tomato ketchup or see my tomato-free tomato sauce recipe link below
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp pepper
- 1 handful chopped parsley
- Preheat the oven to gas 4 / 180C / 350F and grease a loaf tin
- Combine all ingredients in a bowl and mix well by hand
- Press into the loaf tin and bake for 90 minutes.
- If you want to, spread some tomato ketchup or BBQ sauce over the top first
- Let cool completely and drain off excess fat before slicing
- Serve warm with boiled potatoes, greens and onion stuffing and gravy, or cold with potato salad and chutney.
- Goes great with my fruity brown sauce!
