Seafood Chowder
- 2 Tbsp. butter or bacon drippings
- 1 c. diced celery
- 1 1/2 c. diced onion
- 2 to 3 diced potatoes
- 2 c. water
- 2 c. chicken bouillon cubes
- 1 lb. fresh or frozen fish fillets
- 1 (10 to 15 oz.) can condensed New England clam chowder
- 1 1/2 c. half and half
- 1/2 c. milk
- 1 c. water
- 1/8 tsp. Worcestershire
- 1/8 tsp. cayenne pepper
- pepper and parsley (for garnish)
- Saute celery and onion in potatoes.
- Add potatoes, 2 cups water and bouillon cube.
- Cook 10 to 15 minutes or until potatoes are done.
- Add fish and cook 5 minutes.
- Stir in remaining ingredients except pepper and parsley.
- Simmer 10 minutes; do not boil.
- Garnish with pepper and parsley.
- Serves 6.
