Ginger Cream

  1. Combine 1/4 cup water, ginger, and sugar in heavy small saucepan.
  2. Stir over medium heat until sugar dissolves.
  3. Simmer until mixture is syrupy, about 5 minutes.
  4. Cool completely.
  5. Using electric mixer, beat cream in medium bowl until peaks form.
  6. Fold in ginger mixture.
  7. (Can be made 4 hours ahead.
  8. Cover and chill.)
