Carrot Cake
- 1 1/2 c. whole wheat flour
- 2/3 c. white flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- 1/4 tsp. ginger
- 1 c. honey
- 1 c. buttermilk
- 3/4 c. vegetable oil
- 4 eggs
- 1 1/2 tsp. vanilla
- 1 lb. grated carrots
- 1 c. crushed pineapple, drained
- 1 c. walnuts
- 1 c. coconut
- 1/2 c. raisins
- Combine first 7 ingredients in large bowl.
- Combine next 5 ingredients in large bowl; stir well.
- Add flour mixture and all other ingredients to egg/oil mixture and stir well.
- Prepare 3 (8-inch) cake pans by greasing pans.
- Bake at 350u0b0 for 30 minutes. Cool in pans 10 minutes before removing.
- Peel wax paper and cool.
- Frost, cover and refrigerate.
