Jocelyn'S Special Pie
- 4 (1 oz.) sq. semi-sweet chocolate
- 3 large eggs
- 3/4 c. sugar
- light corn syrup
- 1 1/2 oz. jar salted dry roasted peanuts
- 1 (9-inch) frozen deep dish pie shell
- About 3 1/2 hours before serving or early in day:
- Preheat oven at 350u0b0.
- In a heavy small saucepan over low heat, heat chocolate, stirring occasionally, until melted and smooth.
- Remove chocolate from heat; cool slightly.
- In a large bowl, mix eggs, sugar, melted chocolate and 1 cup corn syrup until smooth.
- Stir in peanuts. Pour peanut mixture into frozen pie shell.
- Bake pie 60 to 65 minutes, until a knife inserted one inch from edge of pie comes out clean.
- Cool pie on wire rack completely.
- Brush top of pie with 1 tablespoon corn syrup for attractive sheen.
- Makes 12 servings. Each serving:
- about 425 calories, 23 g. fat, 53 mg. cholesterol and 215 mg. sodium.
