Pistachio Marshmallow Ice Cream

  1. In top of double boiler, combine light cream and marshmallows.
  2. Heat, while stirring, until the marshmallows melt and mixture is blended.
  3. Cool for 20 minutes.
  4. Add the food coloring, salt, almond and vanilla extracts, heavy cream and nuts.
  5. Mix well.
  6. Freeze according to the ice cream maker manufacturers instructions (makes 1/2 gallon).
