Mango Coconut Quinoa Salad
- 2 cups Quinoa, Uncooked
- 1 cup Frozen Mango Chunks, Thawed
- 1/2 cups Red Onion, Diced
- 1 whole Medium Red Pepper, Diced
- 1/2 cups Cilantro, Chopped
- 1- 1/2 cup Coconut, Shredded And Unsweetened
- 3/4 cups Slivered Almonds
- 1 cup Golden Raisins
- 2 cups Frozen Edamame, Thawed
- 5 whole Limes, Juiced
- 3 Tablespoons Balsalmic Vinegar
- In a medium saucepan, cook quinoa according to package instructions.
- In a large bowl, combine quinoa, mangoes, red onion, red bell pepper, cilantro, coconut, almonds, raisins, edamame, lime juice, and balsamic vinegar.
- Serve immediately.
- Store in the refrigerator in an airtight container for up to 5 days.
- This salad can also be served cold.
