Cheats Spinach Pie
- 4 whole Eggs
- 4- 1/2 ounces, weight Spinach, diced
- 1/2 whole Red Onion, very finely diced
- 2-18 ounces, weight Cream Cheese, cut into rough cubes
- 1 Tablespoon Parmesan Cheese
- 1/2 teaspoons Salt
- 1/2 teaspoons Pepper
- 1 whole Large Tortilla (flour Or Corn)
- Preheat the oven to about 200C.
- Grease a round cake tin or springform pan, then push the tortilla into the base so that it creates a sort of pie crust.
- It will flute around the edges a little; thats okay, the mix will push it out.
- Put the pie crust in the oven to crisp a little while you make your mix.
- In a large bowl, whisk the eggs with as much salt and pepper as you like.
- Add the diced spinach and onion to the mix.
- (Frozen spinach is okay, but dont use frozen onions, thats just nasty.)
- Pour this mix into the pie crust which should just be getting crispy now.
- Then scatter the cubes of cream cheese right on top of the eggy spinachy mix.
- (Bursts of cream cheese in this are awesome!)
- Then sprinkle with Parmesan cheese and maybe a bit more salt and pepper and chuck it in the oven at 200C for 20-25 minutes (depending on how good your oven is, mine is terrible).
- Its ready when a skewer comes out clean and the Parmesan is just starting to go brown.
- Your crust should just be crispy at the very top but soft and flaky on the bottom.
- This is a basic recipe.
- Mix it up; asparagus also works well, as does bacon and finely sliced potato.
