Sweet 'N Sour Pork
- 1 1/2 lb. boneless pork chops or tenderloin, cut in pieces
- 2 Tbsp. oil
- 1/4 c. onion, chopped
- 1 (15 oz.) can pineapple chunks
- 1/4 c. packed brown sugar
- 2 Tbsp. cornstarch (rounded slightly)
- 1/4 tsp. ground ginger
- 1/4 c. vinegar
- 3 Tbsp. soy sauce
- 1 medium green pepper, cut in 1-inch sq. (optional)
- Brown pork strips in hot oil in large skillet.
- Add onion pieces and water.
- Cover and simmer approximately 20 minutes. Meanwhile, drain pineapple, reserving juice.
- Combine brown sugar, cornstarch, ginger and salt.
- Blend in juice, vinegar and soy sauce.
- Add this to pork along with green pepper (if using green pepper).
- Stir just until thickened and starts to bubble.
- Add pineapple chunks to mixture.
- Mix, by stirring.
- Serves 4 over fried rice.
